Sugaring 2024 - A Torrential Start

What a great year so far. We tapped on February 6 and had our first boil on Feb. 11, making 7.5 gallons of Golden Delicate. Then the floodgates opened on Leap Day, and we boiled for 7 consecutive days (a first for us) and 9 out of 11 days overall. As of March 12, we’re at 84 gallons, or about 2/3 of our goal for the season.

Now the snow is almost gone, the sap is cloudy, and the syrup is Very Dark and Robust. The trick, of course, is to ignore the calendar. In times past, the ritual was to come home from Town Meeting Day in early March and set your taps. In a decade or so, we’ll be pulling taps on Town Meeting Day.
